Buffalo Burgers
- 1 organic buffalo burger
- 1/2 an onion, diced
- 1/2 a pepper, diced
- 1/2 naturally fermented pickle (I use Bubbies)
- oil (optional)
1) Heat pan over med-high heat. Add a touch of oil. Add onions and peppers. Cook for about 5 minutes.
2) Move veggies to one side. Lower heat to med. Place buffalo burger in pan and cook for about 6 minutes (this is the usual time suggested).
3) Flip buffalo burger and move to the other side of the pan, sliding your veggies over to where the burger was (this allows your veggies to suck up the meat juices). Cook for another 6 minutes.
4) Keep an eye on your veggies throughout the cooking process. They may need a little water to suck up the meat juice, and they may be done before the burger.
5) Place ingredients from the pan onto a plate along with the diced pickles (aka "friendly chunked relish").
Enjoy every bite of the burger with a mix of veggies.
This is more of a meal idea than recipe. I've just discovered buffalo burgers and they are rather nice and different enough from cattle beef to make me feel I am eating something new. If you've never had a buffalo burger, it's more like eating a steak than a burger (in my opinion). It seems heartier.
You could also wrap the burger in lettuce if you want to make a wrap. I am not very good at keeping all the ingredients inside the lettuce, so I just eat it off the plate with a knife and fork (to save my lap and the carpet from the inevitable spills).
If you are tolerating alternative grains and need that sandwich feeling, use your favourite candida friendly bread.
