Costa Rican-style Spinach, Potato and Black Beans

Ingredients:
- 1/2 to 1 cup Vegetable Stock or Water
- 1 Onion, chopped
- 1 tsp. Garlic, crushed
- 1 Jalapeno Pepper, minced
- 2 1/2 cups Tomatoes, fresh, chopped
- 2 tsp. Cilantro, dried
- 4 cups packed Spinach, fresh
- 3 cups Potatoes, cooked, chunks
- 1-15 oz. can Black Beans, drained
- hot Pepper (optional)
Instructions:
1) Cook chunked potatoes just enough so they are still firm.
2) Chop and lightly steam spinach.
3) Heat wok or pan. Add veggie stock or water.
4) Add onions, jalapenos and garlic. Stir and cook until onions are translucent.
5) Add tomatoes, beans and cilantro. Add more liquid as needed to prevent sticking.
6) When the beans are cooked, add the potatoes and spinach. Mix and cook for a few mintutes more.
Add in hot pepper if you like.
