Zucchini Boats

Oven Temperature: 
375 degrees F
Ingredients: 
  • 4 zucchinis
  • 1 cup rice cooked in chicken broth with diced onions, carrots and celery.
  • garlic
  • spinach
  • spaghetti sauce
  • fresh basil
  • salt
Instructions: 

1) Slice zucchini in half. Dig out the innards and set aside. Now you have "boats" in which to fill them. You are only limited by your imagination.

2) Cook spinach and garlic.

3) Salt zucchinis, then fill up your zucchini boats with rice mixture.

4) Pour spaghetti sauce on rice (enough to cover).

5) Top with spinach.

6) Bake for 25 minutes or so at 375 degrees

Notes: 

Be creative with your stuffing!
